Rainbow Cookie Bars
┬áSometimes color is everything, and that is the theme in these Unicorn Rainbow Cookie Bars. Just looking at them has a way of making you happy, and can you imagine the looks on the kids faces when they see these at their next party? They’ll be drawn to them like bees to honey.
My kids always love to ask their dad and I what our favorite colors are. I’m on team green, but daddy always chooses a more diplomatic route. He says he loves ALL of the colors. The truth is that all of the colors are his favorite, and he’s right. Life is more interest in color, lots of color.
These rainbow cookie bars would be a great treat for any rainbow themed event. They would also be the perfect activity for an art party, or be a huge hit at the next bake sale. Whatever kid themed meet up you are headed too, this recipe is sure to be a winner.

Unicorn Rainbow Cookie Bars

Rainbow Cookie Bar Ingredients

Ingredients:
  • 1-1/2 sticks butter, softened
  • 1/2 cup white sugar
  • 1 tsp vanilla
  • 1/4 teaspoon salt
  • 1-1/2 cups flour
  • Food Coloring – We used Americolor Soft Gel Paste in the following Colors:
    103 Sky Blue
    111 Leaf Green
    107 Lemon Yellow
    114 Deep Pink
    122 Violet
Directions:

Heat oven to 300 and line a square baking pan with aluminum foil. Spray the foil with cooking spray. Set aside.

In a mixing bowl, add butter, sugar, salt and flour. Mix well. The dough will be stiff and take a bit to come together. Don’t give up. Use the back of a spoon to mix the butter into the flour.

Evenly divide the dough into 5 separate bowls and add food coloring to each bowl. Using the back of a spoon, mix the food coloring into the dough well. If necessary, use your hands, but beware you may want to wear gloves as the color may stain your skin.

Once all five colors of dough are blended well, divide each color into four sections.

Roll each section into a “thick snake” and place into the prepared pan in a rainbow pattern. There’s no right or wrong way to do this, so let the kids help with this part. It’s like playing with playdough, but you get to eat it afterwards. Too fun!

Once all the dough is in the pan, use your fingers to press it together and evenly into the pan.

Sprinkle with rainbow jimmies and gently press those into the dough.

Place into preheated oven and heat for 50-60 minutes or until set and edges begin to turn brown. Cool for 15-20 minutes in the pan. Remove from the pan by picking up the entire foil piece.

Remove the foil and cut into squares. Set aside to cool completely or serve barely warm.
