Wouldn’t that be amazing!? Making foods fun to try is essential with picky eaters and this Stuffed Rainbow Crepes Recipe was a huge hit with my picky kiddos.
I started cutting the fruits and veggies for this recipe about 30 minutes before we were ready to eat. Typically I let my kids eat as many fruits and veggies as they want before dinner. It seems they eat them better this way.
This time I told them they had to wait. I could literally see their mouths salivating as I cut up strawberries, carrots, and pineapple. The anticipation was killing them, and they were begging to try just one!
When the time came to fill their stuffed rainbow crepes, they couldn’t wait to pick what went in them. I told them they had to choose at least 3 colors to go in their rainbow crepes. They could choose more if they wanted. The more colors, the bigger their rainbow, right? 😉
We started with our veggie crepes for dinner.
First, we spread a layer of cream cheese chicken mixture in the bottom of the veggie crepes. Then we added the veggies. We opted to keep our veggies fresh, but you could cook them as well.
If you’d like, drizzle a bit of warm cream of chicken soup over the top for added moisture.
Our stuffed rainbow fruit crepes were the perfect dessert.
We started our Over the Rainbow Fruit Crepes with a layer of strawberry honey Greek yogurt. You can really use any of your favorite Greek yogurt flavors or even whipped topping. Then sprinkle that with a delicious mixture of fresh fruit, and make your tummy happy.
The best thing about our rainbow theme was getting the kids to try veggie combos they normally wouldn’t. They had to make a rainbow after all. I was impressed with what they were willing to eat.

Red: Strawberries, Raspberries, Cherries, Pomegranates
Tomatoes, Red Bell Peppers, Beets, Radishes
Orange: Mangos, Peaches, Nectarines, Oranges
Carrots, Orange Bell Peppers, Squash, Pumpkin
Yellow: Pineapple, Bananas, Apples, Pears
Corn, Yellow Bell Peppers, Summer Squash
Green: Grapes, Kiwis, Green Apples, Lime Juice
Spinach, Broccoli, Lettuce, Green Bell Pepper
Blue and Purple: Blueberries, Plums, Grapes, Blackberries
Cabbage, Eggplant, Purple Carrots
Here is our recipe for the veggie crepe chicken filling:
Cream Cheese Chicken:
- 1 pound cooked and shredded chicken
- 1 cube butter softened
- 1 8 oz package cream cheese softened
Combine all together in bowl. Heat before serving. Cream of Chicken Soup (thinned) served over top.
Here is our favorite crepe recipe:
Basic Crepe Recipe:
- 4 eggs
- ½ tsp Salt
- 2 cups flour
- 1 ½ cups milk
Blend together until smooth in blender. Pour out a thin layer onto a hot, circular skillet, and swirl around until the layer is smooth. Flip when the edges start to harden.
